Chipa guasu - A traditonal Paraguayan food

“Chipa” is the typical as well as original food of Paraguayans and has almost 70 varieties. Chipa Guazu is one of the varieties of Chipa that is made from onions and corn grains.

It is a cake with very delicious and yummy taste that is served in asados. Chipa refers to a very distinct group of cakes with corns and onions at its base and guazu means big. So as inferred chipa guazu is the biggest of all chipa.

Recipe for Chipa Guazu:

Ingredients: 3 onions, 6 well beaten eggs, corn oil-1/2 cup, milk-1 ½ cups, cream cheese-500gm, corn grains, pepper and salt.

Preparation: Take some oil in a small pan and let it heat, after getting heated add the chopped onion. After the onion gets fried for some time, add milk in it and cook it for about eight minutes. One by one add cheese, beaten eggs, corn grains, salt, and pepper, beat it thoroughly. Put this liquid mixture in a greased pan and then in a 250º pre heated oven, keep it until its top becomes golden. Allow it to stand for 5 minutes and then serve the Chipa Guazu.

Preparation of chipa guazu is same as that of sopa paarguaya; the only difference is it is made by using corn grains instead of corn flour. Some variants of chipa guazu can be prepared without using eggs. In that case, more milk is required. For main course, chipa guazu is mainly used as a side item.
